Growing up as a child without a dad, my sweet and super resourceful mama planted tons of veggies, fruits, tubers, and seeds in our huge backyard. She also raised egg-laying hens, geese, pigs, goats. Our milk came from sweet goats. The farm animals had lots of freedom and we always petted and cuddled them. The pigs, I remembered, always fell asleep everytime I scratched their groin and back with a thin stick (my lil girl naughtiness while the pig tried to eat). LOL
The below is a recipe from my super sweet single parent mama!

When I was in my elementary school days, I had no money to buy a moisturizer popularly known as Johnson’s & Johnson’s baby lotion or baby oil. So I went to my mama’s kitchen and grab some coconut oil and applied the oil in my very dried skin on my legs and arms. And gosh, maybe that was the reason I still have naturally stretched skin! 🙂
Anyway, that was the little story behind the wonders of coconut oil and Filipinos use it on everyday basis. Coconut oil, and coconut meat are the Filipinos daily usage. Now, maybe this was the reason too that my brothers and sisters are over 5 ft 4 inches in height! My five brothers are over 5 ft 10 inches tall, and my four sisters are over 5 ft 5 inches tall, and am almost 5 ft 5 inches tall too! 🙂
AMPALAYA OR BITTER MELON – blood cleanser, very rich in iron, and B complex. This is our main food course when I was still growing. It tastes bitter but all the vitamin contents are inside its bitter tastes. To lessen the bitterness, here’s what you need to do:
Soak in filtered water the cut in half one ampalaya. Don’t forget to scrape and throw away the white soft part found in the middle of this fruit. While the sliced ampalaya is soaked in water, by the use of your two palms, squeeze the fruit and transfer these slices in another bowl without the water.

Butternut squash – a natural aphrodisiac; protection from cancer agents, heart disease, type 2 diabetes, and prevention for poor vision due to its high content carotene, potassium, & vitamin C
Okra – vitamin C, K, & A, rich in folic acid (helps prevents birth defects), rich in dietary fiber to aid cholesterol level
Eggplant – “weight loss”, good skin tone, cancer prevention
String beans or any green beans – rich in fibre good for detoxification; has anti-inflamatory elements which cure or prevent arthritis, asthma, or varicose veins.
Shrimp – rich in vitamin A, C, E, B complex, selenium (to prevent cancer), omega 3, zinc (for your beauty skin)
Field tomatoes – one of the healthiest foods on earth, rich in niacin, lycopene (anti-oxidant)
Garlic – the real deal natural MSM, no need to purchase MSM, cures all sorts of cancer, toxin, bad bacteria, and intestinal parasites!
Onion – regulates menstrual cycle for women; prevents stomach cancer; regulates blood lipids and blood pressure; a cure for tumors, cough and colds.
Heat the two tablespoons coconut oil in a saucepan. The heat should be only 100% degrees as we need to preserve the nutritents. Saute minced garlic, onion, and tomatoes over a semi-hot rod pan (non-stick, free of chemical agents). Throw the small shelled shrimps, about 1/2 – 1 cup of shrimps. If you’re lazy, don’t shell the shrimps. Saute in 1 1/2 minutes, then throw the cubed squash, about 1 cup. Simmer with 1/4 cup water for 2 minutes. Throw the diagonally sliced eggplant and okra as well as the 1 inch cut-size string beans (about 1/2 cup of each kind). Simmer again for another 2 minutes. Don’t forget to cover the pan to prevent oxidation. Last, throw the sliced and slightly squeezed ampalaya. Add another 1/4 cup filtered water when its water is drying fast to prevent from burning the ingredients.
Now, after the above procedures, turn off the heat, transfer in a big nice bowl. Dash with mineral salts, cayenne powder, and paprika. Serve with cooked jasmine rice in portion control. WHY THESE ARE DONE AFTER EVERYTHING ELSE IS CRUNCHILLY COOKED? GO FIGURE – WE LOVE THE LIVE EFFECTS OF MINERAL SALTS AND HERBS! 🙂
